Ashley Benson, MacEwan alumna and creator of Bloom Cookie Co., is bringing her vegan cookies to MacEwan University campus!
Ashley graduated from MacEwan University’s Travel program and worked in the tourism field until her daughter was born. Seeking a career change, Ashley decided to start selling her vegan cookies.
“I have always enjoyed baking for my friends and family, and as many of them are vegan, I had been developing recipes that didn’t utilize egg or dairy,” says Ashley.
She began selling her cookies at the Bison Art and Craft Fair, and was very successful, selling out on the first day of the two-day event.
Ashley, with the help of her husband, developed a brand and officially launched Bloom Cookie Co. in 2011. She began selling her cookies regularly that summer at the Downtown Farmer’s Market and soon after, the cookies were picked up by numerous cafés around Edmonton.
In the spring of 2016, Ashley and her husband built a commercial kitchen in their home that allowed them to increase production and grow into different markets—like MacEwan Eats.
Look for Bloom Cookies on campus in Season (Building 6), the Campus Convenience Store, and the Robbins market, starting Wednesday, September 20.
